Chocolate truffles

Chocolate truffles — it is very simple, chocolate and cream 2:1. Chocolate preferably a dark one, no fillers, but if you want you can use milk, and white, depending on taste. Cream with maximum of fat, but 20% also suits. They can be flavored and fill in a lot of ways, cook mint in cream – and truffles will be mint, add rum in chocolate – and they`ll be rum, hide almonds inside – and they`ll be almond, etc.

Preparation
Melt in microwave or water bath chocolate and mix it well with hot cream, until the mixture becomes smooth and shiny. Let it cool and put in the fridge for 2-3 hours. When mass freezes, form clumps with spoon and roll in cocoa. That`s all! In other portion of chocolate I mixed rum in, grated fresh coconut, and rolled not in cocoa, but in coconut. Also quite good. Better keep in fridge not more than two weeks, but I doubt, that they stand at yours more than a few days
