Preparation
Grind cookies in blender and mix with melted butter. Cover convertible form with baking paper. Put and press cookies in the bottom of form, making a flat cake. Put in the fridge for 30 min.
Prepare first cream. Leave some raspberries for decor. Grind the rest of berries in blender. Mix berry puree with sour cream and 3 tbsp of sugar.
Pour 10g of gelatin with 2 tbsp of room temperature water and let it stay for 15 min. Then heat it on water bath till complete dilution. Add gelatin in cream and mix well. Pour first cream on flat cake from cookies and put in the fridge for an hour.
Prepare second cream. Mix cream, 3 tbsp of sugar and cream cheese. Pour 10g of gelatin with 2 tbsp of room temperature water and let it stay for 15 min. Then heat it on water bath till complete dilution. Add gelatin in cream and mix well. Pour second cream on already slightly hardened first cream and put in the fridge for 3-4 hours till complete dilution.
After cake freezes, remove it from form, remove paper and decorate as you wish – I decorated with raspberry and chocolate topping.
