Appetizer of eggplant with garlic

Extremely easy to prepare recipe with eggplant, delicious snack or warm salad (you can eat it cold), serve as a side dish to potatoes, meat or rice, or just eat with fresh bread

Preparation
Dice eggplants, salt and pour for 15-20 min to get juice. Squeeze well, and fry in oil covered with lid for 3-5 min, to steam them well.
Stew in a separate pan onion and diced mushrooms (to semireadines), pepper it and ad to eggplants. Cook all together (without lid) for about 7-10 min over medium heat, add garlic (press it) and soy sauce and cook for about 1-2 min.
