Preparation
Mix eggs with water, salt flour. Dough will be thicker than for pancakes, cover it and leave for 20min.
Boil the water, add a pinch of salt.
Prepare wet board, long knife, bowl and strainer.
1/3 of dough put on board a smooth layer.
With the help of knife put long strips of dough into boiling water, the dough will fall under its weight and become noodle. Mix shpettsle not to stick them to the bottom of the saucepan. As soon as they come up, immediately remove them with a strainer to a bowl. Boil all of it.
Then melt some butter (30-40g) on the pan. Put noodles in butter, you can add pepper, stir it and heat a little.
You can serve it as a side dish (I served with boiled chicken) or alone, with grated cheese. Also you can bake it in the oven with ham, tomatos and cheese. You can add shredded spinach, and get green shpettsle.
