
I love croissants. Especially with chocolate. I baked them a few times. Propose you the recipe which I liked the most. (I found it on the Internet).
Preparation
Dissolve yeast in water of room temperature. Sift the flour, add salt, sugar and 30 g of soft butter, pour diluted yeast and knead dough. Cover with food film and leave for 1,5 h to rise.

Knead dough, cover with film and put in the fridge for 1 hour. Knead it again and put in the freezer for 0,5 h.
Rest of butter stir to smooth and soft condition. Roll dough. Grease with butter 2/3 of the cake and fold three times.

Turn at 90* roll again ad fold three times. Wrap dough in food film and put in the freezer for 0,5 h, and then in the fridge for 1 h.
Roll dough again, 2/3 of it grease with rest of butter, fold three times, turn at 90*, roll again and fold three times. Wrap in film and put in the freezer for 0,5 h, then in the fridge. In an hour you can roll dough for forming croissants. I leave it to stay for a night.
Roll cold dough in a layer, cut in triangles.

At the base of the triangle put a piece of chocolate and wrap in a croissant (at first easy (not tightly), then harder).

Spread on a covered with cooking paper baking sheet. Grease with yolk. Leave it to rise for about 1 — 1,5 h. Grease with yolk again and bake in the oven at 220℃ for 5 min, then reduce the temperature to 190℃ and bake for 10 min.

I got more than 30 of them.
