Preparation
Сut veal across the grain into pieces of 1 — 1,5 сm thick. Beat each piece with pestle on both sides.
Press in bowl 1 clove of garlic, add vinegar and mix oil in.
Spread one piece of meat on board, salt, pepper and grease with garlic mixture, make a roll, then the following piece, etc…
Spread tightly in bowl, cover and put in the fridge for 20-30 min.
Wash and soak honey mushrooms and white mushrooms (all separately!). Once the soak, boil in the same water to readiness. Pour water from white mushrooms in separate bowl.
Finely chop mushrooms.
Peel onion, wash, cut finely. Put in saucepan with thick bottom (I take cast iron) butter, melt it, add onion and fry till golden color.
Add all mushrooms, salt, pepper, fry for 5 min.
Stew flour to cream color, add sour cream.
Stir into smooth mass. If it is too thick, add some water. It should be as dough for pancakes, a bit thicker.
Pour 2/3 of mixture to mushrooms, and another 2-3 min over low heat.
Take meat form fridge, unfold each piece, put spoon of mushrooms on the edge
Wrap in roll, tie with thread. Mushrooms are still in saucepan. Make gravy from them.
Heat pan with oil, spread rolls and fry from all sides.
Remove thread.
Add to remained mushrooms rest of sour cream mixture, and pour water, in which were boiled white mushrooms
Chop clove of garlic finely, add in sauce, add salt to taste, let the sauce boil for a few minutes.
Spread fried rolls in refractory bowl, pour sauce and stew covered with lid for 10 min.
