Enchilada — Traditional dish of Mexican cuisine. Enchilada is a thin flat cake (tortilla) from corn flour, in which is wrapped stuffing. Most often filling is meat (usually chicken meat), added by vegetables and cheese. Wrapped enchiladas are fried on pan.

Preparation

Stew tomato. Cut vegetables and meat in thin strips and fry in pan over strong heat for 2-3 min, constantly stirring. Wash spinach and dry. Put in the middle of each flat cake spinach leaves, spread filling on them and sprinkle with grated cheese. Roll tight flat cakes. Fry in grill-pan over strong heat for 3 min from each side. Spread on greased with butter baking sheet. Turn off the heat and cover with lid, let it stand for 5 min.
