bacon (smoked)
70 g.
onion
0,5 шт.
white wine
50 ml
eggs
1 шт.
salt
ground black pepper

Turkey (shin) stuffed

Preparation

Wash shin and dry with paper towel. Carefully remove skin. Cut meat from bone. Mince meat in meat grinder, add egg and vine, stir well. Finely chop bacon and onion, add in mince. Sew up skin of the turkey from one side, put mince from second and sew too (though you can just stick with toothpicks). Put in steamer. On grill, at 180℃, moisture 60%, time 30 min, internal temperature (using probe)- 75-80℃.
Remove threads before serving (toothpicks), sprinkle with spicy herbs.
