Actually, there is no calamari in this dish.
My calamari are only called so, but in fact they will be made from good piece of veal, and, what better, with fat pork.
Preparation
Cut piece of meat along in slices size as a palm.
Hammer the meat, and spread on a wide plate.
Now preparing a sort of improvised sauce with spices – grate onion and sprinkle it with black and red pepper.
To prepare «Squids» we`ll need " tentacles". Their role is carried out by long noodles, which the Italians call pasta.
Spread on small plate hammered slices of meat, smear them with onion sauce, Put on them a bunch of spaghetti, make rollsand stick with toothpick. Do not wrap the dough — spaghetti inside roll also should boil.
In pre-cooked pot of boiling water spread «Squids» – at first steam «tentacles», that they are not broken when placing them in water.
While half of dish is marinating, cook in boiling water with spices filling with mushrooms.
Stew chopped onion in sour cream, adding mushrooms.
You can try an opposite variant – stew mushrooms, adding onion
.
The result should be similar: totally soft onion and strong aroma of mushrooms.
Marinated champignons from shop are not quite good for this dish, so you should get out of the cellar jar of marinated white mushrooms, royal ones («hare» — yellow, with bluish cuts and very soft stalk) or chanterelles.
Take «calamari» out from boiling water and spread in pan with mushroom filling. Afted that stew them together for 10-15.
